Instructions:
- Season the lamb chops with salt and pepper on both sides.
- In a small bowl, mix together the grated Parmesan cheese, minced garlic, and dried rosemary.
- Heat olive oil in a large skillet over medium-high heat.
- Press the Parmesan garlic mixture onto one side of each lamb chop.
- Place the lamb chops, cheese side down, in the skillet and cook for 4-5 minutes until the Parmesan crust is golden and crispy.
- Flip the chops and cook for an additional 3-4 minutes for medium-rare, or longer to your desired doneness.
- Garnish with fresh parsley before serving.
