5. Combine Wet and Dry
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. If the batter feels too thick, stir in 1–2 tablespoons of milk to loosen.
6. Add Fruits and Nuts
- Fold in the soaked dried fruits (along with any remaining soaking liquid) and chopped nuts if using. Mix until evenly distributed.
7. Bake
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake in the center of the preheated oven for 50–60 minutes, or until a skewer inserted into the center comes out clean.
8. Cool and Store
- Allow the cake to cool completely in the pan. Then remove and wrap tightly in foil or cling film to preserve moisture.
- Optional: Brush the cake weekly with a bit of rum, brandy, or orange juice to keep it moist and enhance the flavor over time.
