- 1/4 cup (30g) chopped nuts (walnuts or almonds)
- 1 tablespoon molasses or honey (for deeper flavor)
Instructions
1. Soak the Fruit
- Place the dried fruits in a bowl and pour in orange juice or rum/brandy. Stir to coat evenly. Cover and let soak for at least 4 hours or overnight, stirring occasionally. If short on time, microwave for 1 minute and let rest for 30 minutes.
2. Preheat and Prepare Pan
- Preheat your oven to 150°C (300°F).
- Grease and line an 8-inch round cake pan with parchment paper on the bottom and sides.
3. Mix the Dry Ingredients
- In a medium bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
4. Cream the Butter and Sugar
- In a large mixing bowl, cream the softened butter and brown sugar with a hand mixer until light and fluffy, about 2–3 minutes.
- Add eggs one at a time, beating well after each. Stir in vanilla extract, citrus zest, and molasses or honey if using.
